So I have a 2009 iMac that I would like to take the FaceTime camera from and put it on my own hackintosh, does anyone know if it works on USB interface like the old G4 iMac camera did.

You could get a Logitech USB camera for your Hack. I have added a Logitech HD Pro Webcam C920 on my Daughter's Hack. Blurb and image below is for the C920 camera:

Camera sits on top of your monitor, has a reasonably long USB 2.0 cable connection. There may be newer models with better resolutions that work, but this is one I know works with macOS for FaceTime etc.

can you hide this camera behind the monitor at all?

No, it sits on top of the monitor, softly clamped to the top of the monitor to hold it in place when it is being used. You could demount the camera when not use and set it on the desktop while still connected to your hack or the USB ports on your monitor.

Depending on the type of bezel on your monitor it can overhang the bezel as the front section of the camera is approximately 8-10mm in depth.

might be a bit big for my bezel is 7mm wide

Yes, it overhands the screen bezel on my daughter's Dell by a couple of mm.

You could add a couple of self-adhesive pads to the underside of the camera mount to raise it a couple of mm so it doesn't overhang the bezel. Not ideal I know but pretty much all of the external cameras are mounted/clamped on the top of the monitor in a similar manner.
