Mojave 10.14.6, Catalina 10.15.7 or Big Sur 11.0.1.

I would use OpenCore if you choose to install Big Sur.

If you plan to use your current/existing CLOVER folder for the Coffee Lake system, then you should use Clover and install Mojave or Catalina. As that folder is already preconfigured for your system and will work with Clover without any issues.

I would recommend you not use the latest version of Clover, instead use Clover_r5119. The newer Clover releases are a bit of a mess as Splice and the other developers have tried to incorporate OpenCore in to the Clover boot loader, badly.

I have a copy of the folder I adapted for your Coffee lake system (iMac 18.1 SMBIOS) on my server. I can provide a copy of the CLOVER folder if you need it.

For Catalina (and Big Sur) it is done exactly the same as it was before.

To create a macOS Catalina installer, Open Terminal and paste this command:

sudo /Applications/Install\ macOS\ Catalina.app/Contents/Resources/createinstallmedia --volume /Volumes/Untitled

This command assumes the following:
  1. You have a copy of macOS Catalina downloaded and saved to your Applications folder.
  2. You have formatted the USB as GUID Partition Map and HFS+
  3. You have named your USB 'Untitled'.
Terminal Command should run after you have entered your password, confirmed the USB can be erased.

Then when the macOS boot drive has been created, install Clover to the USB. Remember to select the USB as the destination and to customise the install so you are installing in UEFI Mode only and to the ESP (UEFI partition). The other settings should be dealt with by the Clover folder you already have.

You will need to replace the CLOVER folder created by the installer on the USB with the one I provided.

I would recommend you download and install Clover_r5119 not one of the more recent versions. Splice and the other developers of Clover have tried to incorporate OpenCore in to the Clover installer and made a complete mess of things. So this older version is probably the best to use, at this time. Here is a link to the 'working' Clover installer - https://github.com/CloverHackyColor/CloverBootloader/releases/download/5119/CloverV2-5119.zip

Yes, these properties being wrong can cause a kernel panic. As with all things it really depends on what is different as to how much effect it will have.

The Coffee Lake CPU might need a different SMBIOS, if you used an iMac 18.1/2/3 SMBIOS with a discrete GPU.

The Clover folder's ACPI folder lacks a number of essential SSDT's for Catalina.

The newer Clover installer may not be finding the drivers, as they are in the /CLOVER/drivers64UEFI folder rather than the newer /CLOVER/drivers/UEFI folder

Only having the High Sierra 10.13.6 USB port limit patch enabled my cause some issues, if you are using a different version of macOS.

For a system with just the IGPU, you should probably use an iMac Mini 8.1 SMBIOS.

You will need to enable the IGPU and set it as default in the bios.

You will need to set the AAPL,ig-platform-id as one for an IGPU only system, if it contained a dGPU previously this will have been set for a 'Headless' IGPU, with the dGPU undertaking all the graphics display work. The IGPU would have undertaken QuickSync and Compute processes, like a real Mac.

OK, so everything is the same as before apart from the M.2 SSD being present in the system and tried creating a new SMBIOS and still no luck booting up, also yesterday i tried creating an opencore mem stick and had little luck there either

Provide me with a copy of the ACPI DSDT and a full breakdown of the system components, and I will create/adapt an OpenCore folder for the system.

I have created a few and seem to be getting the hang of creating them for different series CPU and motherboards. They have mostly been successful, and those that weren't didn't require too much tweaking to get them working.

Yes, the DSDT.aml for the system.

Press F4 on the Clover boot screen and the full ACPI set of tables will be saved to the /CLOVER/ACPI/origin folder, as long as the origin folder exists.

It doesn't show any response to the F4 button being pressed, so just wait for 30-60 seconds so the files can be written to the USB, before shutting the system down.

All you need to do is boot to the Clover boot screen, and press the F4 key to obtain the ACPI tables. You do not need to be able to boot the system from the USB.

That is why I said before shutting down the system, rather than before you select the macOS icon and boot the system.
